Banana Bread


My girlfriend Theresa and I decided to try a new recipe every other weekend and for our first weekend, we did this Banana Bread recipe from Simply Recipes. It was delicious.

Banana Bread
  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour
Preheat the oven to 350°F (175°C).
1. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
2. Mix in the sugar, egg, and vanilla.
3. Sprinkle the baking soda and salt over the mixture and mix in.
4. Add the flour last, mix.
5. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour.
6. Cool on a rack. Remove from pan and slice to serve warm.

Stuffed Peppers with Ground Turkey

I was driving home from work and heard part of this recipe on the radio and thought, "Hey, I should make that". So I did. And these babies were absolutely delish! And the soup I made with the leftovers was even more heavenly. Notice how Patrick made his into a cute flower.

Stuffed Peppers with Ground Turkey
  • 1/2 lb. ground turkey
  • 1/2 small onion, chopped
  • 1 cloves garlic, chopped
  • 1 C. shredded cheese (any flavor - I just marbled jack)
  • 2 green peppers
  • 2 tbsp. Olive Oil
  • 1/2 C. mushrooms chopped
  • 1 tbsp italian seasoning
  • 1 small can diced tomatoes
  • 1/3 can of tomato sauce
  • 1/2 cup cooked brown rice
  • Salt and Pepper to taste
Preheat the oven to 350°F (175°C).
1. Cut the tops off of peppers and remove ribs and seeds. Chop flesh from tops and set aside. Wrap bottoms in aluminum foil and place in a baking dish. Bake for 15 minutes in preheated oven. Remove from heat when done.
2. Brown turkey and drain on paper towel. Set aside.
3. Add olive oil, salt & pepper, chopped onions, garlic, mushrooms and peppers and saute until tender.
4. Return turkey to skillet and add rice, italian seasoning, tomatoes and tomato sauce and saute until heated through.
5. Fill peppers with mixture and top with cheese. Return to oven in baking dish and continue cooking 15 minutes.
